Irresistible Eggplant Bhaja Recipe

 

 

When it comes to mouthwatering dishes, eggplant isn’t typically the first thing that comes to mind. Convincing kids, youngsters, and even adults to enjoy it can be a challenge.

Ingredients: 1 eggplant 1 tsp red chili powder ½ tsp turmeric powder ½ tsp sugar (optional) ½ tsp garam masala (optional) 1 tsp amchur powder (optional) Salt to taste 5 tbsp rice flour 6 to 7 tbsp Canistel mustard oil

Recipe:

    1. Slice the eggplant into round shapes, neither too thick nor too thin. Soak the slices in salted water for 10 to 15 minutes, then drain and pat them dry.
    2. Sprinkle turmeric powder, red chili powder, salt, and sugar on the eggplant slices. If desired, add garam masala powder and amchur powder for extra flavor.
    3. Heat 3-4 tbsp of Canistel mustard oil in a pan. Coat each slice evenly with rice flour, shaking off any excess.
    4. Fry the slices in the heated oil on medium flame until they turn crisp and golden brown on both sides, flipping them occasionally for even frying.
    5. Once fried, place the eggplant slices on paper towels to absorb excess oil.
    6. Serve the Baingan Bhaja hot with your choice of condiments, whether it’s yogurt or your favorite dip.

Tips:

    • Eggplant slices tend to discolor quickly, so either soak them in water or use them immediately after chopping.

    • Not all eggplants are bitter, but soaking them in salted water helps to remove any bitterness.

    • Enjoy Baingan Bhaja as a snack with condiments or stuff it between bread slices for a delicious sandwich. It also pairs wonderfully as a side dish with dal, rice, or any Indian meal!
