The Ultimate Dal Tadka Recipe

Ingredients:

     

      • 1 cup Toor Dal (split pigeon peas)

      • 2 tablespoons Canistel A2 Desi Cow Ghee

      • 1 medium onion, finely chopped

      • 1 large tomato, chopped

      • 4-5 garlic cloves, minced

      • 1-inch piece of ginger, grated

      • 2 green chilies, slit

      • 1 teaspoon cumin seeds

      • 1 teaspoon mustard seeds

      • A pinch of asafoetida (hing)

      • 1/2 teaspoon turmeric powder

      • 1/2 teaspoon red chili powder

      • 1 teaspoon coriander powder

      • 1 teaspoon garam masala

      • Salt to taste

      • Fresh coriander leaves, chopped for garnish

      • Juice of half a lemon (optional)

    Instructions:

       

        1. Cook the Dal:

             

              • Rinse the toor dal thoroughly under running water. Soak it for 15-20 minutes.

              • In a pressure cooker, add the soaked dal along with 3 cups of water, turmeric powder, and a pinch of salt. Cook for 3-4 whistles until the dal is soft and mushy. Set aside.

          1. Prepare the Tadka (Tempering):

               

                • In a heavy-bottomed pan, heat 2 tablespoons of Canistel A2 Desi Cow Ghee on medium flame.

                • Add the cumin seeds and mustard seeds. Let them splutter.

                • Add a pinch of asafoetida, followed by the minced garlic, grated ginger, and slit green chilies. Sauté until the garlic turns golden brown and aromatic.

                • Add the chopped tomatoes and cook until they soften and the oil starts to separate from the mixture.
